These birds are hand picked from New Orleans.  They are pasturized (free range on fresh pasture) in a family owned farm and weight between 12-20 pounds. 

 

To prepare each bird it takes 3 days -
  • Day 1, Cleaning & Brinning
  • Day 2, Flavor injections and marinade bath
  • Day 3, Dry seasoning rub and deep fried to perfection.
